Easy Chewy Noels

2 tbsp. butter
2 eggs
1 tsp. vanilla
1 cup dark brown sugar
5 tbsp. flour
1/8 tsp. baking soda
1/4 tsp. salt
1 cup nutmeats, broken in pieces

Set the oven at 350 degrees. Melt butter in a 9 x 9 x 2-inch pan. Beat eggs lightly; add vanilla. Mix remaining ingredients; add to eggs. Mix well and pour into pan. Bake until firm to the touch about 25 minutes. Turn out onto waxed paper, buttered side up. Dust with powdered sugar if desired.

Yield: 2 dozen.

Almond Rosa Cookies

1 cup butter
1/2 cup brown sugar
1/2 cup white sugar
1 egg yolk
1 tsp. vanilla
2 cups cake flour
4 sm. milk chocolate candy bars
1/4 cup finely chopped almonds

Cream butter and sugars until light; add beaten egg yolk and vanilla. Add flour; mix thoroughly. Spread thinly on two cookie sheets. Bake at 350 degrees until light brown. Melt chocolate; spread on warm baked cookies. Sprinkle chopped nuts over chocolate; cut in squares while warm.

Easy To Make Chess Cookies

1/2 cup butter
2 cups brown sugar
1 1/2 cup sifted flour
2 tsp. baking powder
Pinch of salt
2 eggs, unbeaten
1 cup chopped nuts
1 tsp. vanilla

Melt butter in a heavy skillet; add brown sugar. Stir over low heat until sugar dissolves and bubbles. Remove from heat; cool to lukewarm. Sift flour with baking powder and salt. Stir eggs, one at a time, into sugar mixture; mix well. Add flour; blend well. Add nuts and vanilla. Pour into greased pan. Bake at 350 degrees for 30 to 35 minutes. Cookies puff during baking, and sink down as they cool. When cool, cut into squares.

Yield: 12 cookies.
